Our Farmer’s Market has the most gigantic, organic cantaloupes this year. They are absolutely delicious… they are just so creamy and so sweet. I just can’t get enough!

But, I do have to say there’s almost a “pressure” to get through one. LOL! It takes us DAYS to finish a full melon in our family of three. So, I decided it was time to start thinking of a good recipe that harnesses all that tasty cantaloupe for the power of good!

Being pregnant in the summer, I’m craving cool drinks like no one’s business, so I knew I was going to make a smoothie. I then started looking in fridge and we had too many cucumbers (another “hot” Farmer’s Market item right now). I also happened to have some left over organic mint. Perfect!

The end result is a cool, icy treat that is so tasty and so nutritious. I especially love the mint, because it’s great for digestion and heartburn—a common side effect of pregnancy.

Mint Cantaloupe Smoothie Ingredients

  • 4 cups of cantaloupe
  • 3/4 cup of coconut water (you can use raw milk, coconut milk, or even water, depending on your preferences)
  • 1/4 peeled cucumber
  • 4 mint leaves
  • Honey to taste (I like this brand.)
  • Ice (optional)

How to Make a Mint Cantaloupe Smoothie

  • Put all of the ingredients in the blender and blend away. (Since you aren’t using frozen ingredients, you don’t need a fancy commercial-grade blender—any old blender or immersion blender will do the trick for this yummy smoothie recipe.)
  • Pour into glasses and enjoy the smoothie immediately.

Note: This recipe makes about three servings.
